ZESTY CHICKEN AND RICE
CCSFX Recipe for Beans and Bread Casserole

CCSFX will be responsible for 35 casseroles (this recipe until further notice) every 3rd Friday of the month.

Try reciting this prayer as you prepare this casserole for God’s hungry people:

Dear God,

     As we thank you for everything we eat and drink,

     we remember all the hungry people in the world.

     Help them as they search for their “daily bread”,

     and help us never to waste or be greedy.

     For the sake of Jesus Christ, Our Lord and theirs.

Notice that all ingredients are fully cooked before assembly of the casserole. Just mix all the ingredients together, place them into the pan, cover tightly with aluminum foil (NO PLASTIC WRAP), and then freeze the casserole until delivery.

Zesty chicken and rice

3 cups cooked rice  (white or brown rice)
2 cans (2.8 oz. each) French fried onion rings (or one 6 oz. can)
1 tsp Italian seasoning
3 1/2 cups prepared chicken broth or bouillon
3 cups cubed, cooked, chicken [Do not use ground chicken. Use canned, cooked chicken (2 ea. 12.5 oz cans) or fresh chicken that you cook yourself.  Please cut chicken into bite size pieces.]
1 cup bottled Italian salad dressing  (This is an entire 8 oz. bottle of dressing)
Spray aluminum pan with non-stick cooking spray.
Combine all ingredients in large bowl.
Pour into pan and then cover the pan tightly with aluminum foil. 
NOTE:  It is quite ‘soupy’ at this point but the rice will soak it up!
Mark the pan with “Beans ‘n’ Bread”.  FREEZE.

Delivery options:

1.      Deliver the frozen casserole to the parish office anytime before 3:30 p.m. on    Wednesday the week of the 3rd Friday of the month (example: Wed. July 14, 2004) so that it can be placed in the casserole freezer. The office is open 9:00 a.m.- 4:00 p.m., Monday through Thursday.

2.      Bring the frozen casserole to the church upper parking lot between 8:45 and 9:15 a.m. on Thursday, the day before the 3rd Friday of the month (example: Thurs. July 15, 2004).

3.      Call Lori Brando at 410-628-2565 (H) or 410-614-0730 (W) and arrange to deliver casserole to her home.

4.      Bring the frozen casserole to church on Sat. or Sun. and place it in the Gathering Space freezer.
